does someone know which category i have to book to get a guaranteed model?

yes Sixt offers three different cars which are guranteed when you book "Model Guaranteed" category.
At the moment they have Jaguar F-Type, Ford Mustang GT Convertible and Jeep Wrangler

Compared to other countries Sixt in US has a rather poor fleet available as far as guaranteed models are concerned. The number is very low as @Speedrider describes correctly. I don`t understand this kind of policy which a premium car rental company applies.

In XDAR Sixt offers the Mercedes S-Class and the BMW 7 series. Both are not guaranteed. When I want to book a S-Class I would like to get one guaranteed. No chance for Sixt to get me as a customer!

There are only 175 miles per day in XDAR included. Very poor guys!

Besides the vehicle mentioned by @Speedrider there are some other which you can see on the screenshots below:

This is true @Bataya_1 . But there are really not too much guranteed model available at Sixt compared to other car rental companies like Avis.

Guaranteed models are very expensive. Not only at Sixt but at the other car rental companies also.

What I am looking for in terms of guaranteed models are more the sedan types and not the sports cars or convertibles.
